- 1 large bunch cilantro (about 1 1/2 cups total, divided)
- 1/2 cup tomatillo salsa (salsa verde)
- 1/3 cup mayonnaise
- 1 1/2 Tbsp fresh lime juice (from 2 limes), plus extra lime wedges for serving
- 1 tsp kosher salt, divided
- 4 cups shredded rotisserie chicken (from a 3 1/2-lb chicken)
- 2 cups mashed avocado (about 2 avocados)
- 8 corn tostadas
- 4 cups shredded iceberg lettuce (from 1 head)
- 3 radishes, thinly sliced into matchsticks (about 1/2 cup)
- Prepare the cilantro: Remove the thick, woody stems and discard. Measure 1 cup of cilantro leaves and tender stems, and transfer to a blender. Coarsely chop the remaining 1/2 cup cilantro for garnish.
- Make the salsa verde dressing: In the blender, combine the cilantro, tomatillo salsa, mayonnaise, lime juice, and 3/4 tsp of salt. Blend for about 20 seconds, or until smooth. Transfer the dressing to a large bowl, add the shredded chicken, and toss to coat thoroughly.
- Assemble the tostadas: Spread mashed avocado evenly on each tostada. Sprinkle with the remaining 1/4 tsp salt. Layer the shredded lettuce on top, followed by the salsa verde chicken mixture. Garnish with radish matchsticks and chopped cilantro.
